Beyond Zucchini Bread | Rachel Begun, MS, RD

If you garden or take regular trips to the farmer’s market, then you know that right now zucchini is plentiful.  In fact, you probably have more than you know what to do with.  While making and sharing endless loaves of zucchini bread is a nice gesture, we thought you’d want ideas for other ways to enjoy this delicious and nutritious summer squash.

There are two reasons to focus on the abundance of zucchini currently available.  For starters, it is a nutrition powerhouse. Zucchini and other summer squashes are high in antioxidants, providing anti-cancer and anti-inflammatory benefits.  Zucchini is also a good source of B vitamins and the minerals manganese and magnesium.

The second reason for enjoying zucchini is its culinary versatility.  It can be enjoyed raw in salads and side dishes, grilled on the barbecue, roasted in the oven and baked into sweet and savory goods.  Here are some of my favorite gluten free recipes from other bloggers and food recipe sites.

    I couldn’t find a way to ask a question about your recent NFCA column on rehydrating on that website so I followed the link to your blog. I was wondering what you thought about plain coconut water. My daughter drinks a great deal of it (she is very athletic and sweats amazingly). She has celiac and crohn’s.
