Cappello’s Gluten-Free Pastas and Cookie Dough – Review and Giveaway | Rachel Begun, MS, RD

Cappellos pastas

Cappello’s is a company near and dear to my heart.

I moved to Boulder, Colorado (from New York) on June 9, 2013.  Saturday, June 15th was my first trip to the Boulder Farmers Market, a truly awesome outdoor farmers market.  As I was strolling through the market and falling in love with it, I came across Cappello’s FRESH gluten-free and grain-free pastas (fettuccine, gnocchi and lasagna sheets).  Fresh gluten-free pasta…I just had to try it.

I bought a package of the gnocchi, my favorite pasta by far, and absolutely fell in love with it. Not just because it tasted great and had a wonderful texture, but because I liked the ingredients statement. I remember exactly how I prepared it that first time: with Hazel Dell Mushrooms (also from the Boulder Farmers Market), olive oil and a sprinkle of Parmesan cheese.  Not only was it a superior gluten-free gnocchi, it was a cinch to make!

On my next trip to the market, I stopped by the Cappello’s booth and told Ben (one of the founders) how much I loved his product. He generously supplied me with a complimentary package of the lasagna sheets, which I used to make ravioli and were just as awesome.

I’ve never been a huge pasta fan–even before I went gluten-free–but that has all changed. I’ve been eating Cappello’s regularly ever since.  It’s so good, that even some of the local Boulder restaurants use it.  And that says a lot, because the Boulder restaurant scene is top notch.

Over the past year, I have seen Cappello’s grow and expand.  It is now carried and featured prominently at the Boulder Whole Foods and Lucky’s Markets, so I’m guessing it is making its way nationwide.

And when I least expected it, I came across Cappello’s gluten-free and grain-free chocolate chip cookie dough.  It is an awesome product and a go-to for me when I want an easy, fresh-baked gluten-free treat.  Here’s a little hint for a decadent treat:  put white frosting in-between two Cappello’s cookies.  I promise you will be quite happy!

And as you all know, when I love something I share the love with a giveaway.

We are fast approaching the Jewish holiday of Shavuot, where, traditionally, dairy foods like ravioli and lasagna make up the holiday meal. This is the first Shavuot that my daughter (her favorite holiday BTW) has to experience as a Celiac, and I was in a panic tring to find delish substitutes that we could all eat and not have to single her out. THis is it – thanks for the opportunity and the info
