Food as Medicine in Celiac Disease: Nutrition Beyond the Gluten Free Diet | Rachel Begun, MS, RD

On Wednesday, January 25th, I gave a Webinar hosted by the National Foundation for Celiac Awareness (NFCA) and sponsored by Blue Diamond Growers and Cabot Cheese entitled, Food as Medicine in Celiac Disease: Nutrition Beyond the Gluten Free  Diet.

In attendance were both health professionals and consumers wanting to learn about how to treat celiac disease with food as medicine for those who continue to experience health issues even after going gluten free.

The free webinar addresses the following topics and can be downloaded from the NFCA’s Archived Webinars page.  In addition, I will be responding to questions submitted by attendees after the webinar and will post them here as well.

  • What is Celiac Disease?
  • Celiac Disease Symptoms?
  • Long-term Conditions Associated with Celiac Disease
  • Food As Medicine Approach
    • Nutrient Dense Gluten Free Diet
    • Reversing Nutrition Deficiencies
    • Rebuilding Gut Health

The deadline to submit questions to NFCA was January 27, 2012.  However, if you download the webinar and have questions, please feel free to submit them to me below and I will answer them in future Ask The Gluten Free RD posts.
