The two recipes I’m loving right now are complementary to one another. I don’t mean they should be eaten together, but rather the rationale why I love them are complementary. One recipe is a healthy way to enjoy an indulgence. The other is an easier way to enjoy a healthy food.
I hope you like these recipes as much as I do.
Chocolate Chip Brownie Bars
I love this recipe from Roxana’s Home Baking, because it is a truly healthy way to indulge in rich, dark chocolate. With an ingredient list of just walnuts, almonds, dates, chocolate chips, cocoa powder and salt, there is absolutely no guilt in this treat! Most people love chocolate, but there are those who like straight chocolate and then there are those who like a little substance to their chocolate in the way of a brownie, cake or mousse. I usually fall into the latter category. This treat provides rich, dark chocolate with a little substance that is provided by nuts and dates, not refined flours and starches. In lieu of vegan or carob chips, I opted for dark (70% cacao) mini chocolate chunks.
Very Green Avocado Tahini Dip
I love this recipe from the cookbook Wild About Greens (I own a copy) by Nava Atlas of www.vegkitchen.com for many reasons. I’ll share three here. Reason 1: you get heart healthy fats and antioxidants from the avocado, fiber and antioxidants from the micro greens and herbs, and fiber and protein from the sesame seeds. Healthy fats, fiber and protein all provide satiety (a feeling of fullness) to a meal, which is important for weight management. When you get the trifecta all in one, like in this recipe, you know your eating good. Reason 2: this recipe is a perfect example of how to get the health benefits of greens if you don’t enjoy them prepared in other ways, such as sautéed or raw in a salad. Reason 3: I love cumin, particularly with the non-traditional pairing of avocado.
PLEASE NOTE: I WILL BE POSTING A COOKBOOK REVIEW AND GIVEAWAY FOR WILD ABOUT GREENS ON MONDAY, SEPTEMBER 10TH. KEEP AN EYE OUT!
