I’m currently having a love affair with the combination of chocolate and orange. I could buy a chocolate bar tinted with orange, but I like my chocolate with a little more substance. Think brownies, fudge and other chocolate indulgences that you can bite and chew.
This recipe provides all the indulgence without compromising on nutrition.
At the heart of the “substance” of these bites are heart-healthy walnuts and sweet Medjool dates. Everything else just takes the flavor profile up a notch.
I used Black Onyx Cocoa Powder for this recipe, which provides a rich chocolatey taste and is a little darker. Feel free to use whichever cocoa powder you prefer.
Chocolate Orange Walnut Bites
gluten-free, dairy-free, vegan, no refined sugars
Serves: ~14 bites
1 1/2 cups walnuts
1/4 teaspoon salt
1 cup pitted and chopped Medjool dates
1/3 cup cocoa powder (Black Onyx Cocoa Powder was used by me)
1 teaspoon vanilla
2 teaspoons grated orange zest
1/2 teaspoon grated ginger
Grind walnuts and salt in a food processor until finely ground, but not flour like, The crumbs should hold together. Add the dates, cocoa powder, vanilla, orange zest and ginger and grind to incorporate evenly. Use your hands to roll the "dough" into balls. Place in an airtight container and refrigerate for at least one hour to let the bites hold together. These should keep in the refrigerator in a sealed, airtight container for one week.
