Healthy meet indulgence…truly.
One of my pet peeves is when people call desserts or indulgent snacks “healthy” just because an ingredient was swapped out for something a little bit better. I can promise you’ll never see me calling my cookies, cakes or scones healthy. I mean can’t we just eat wholesome healthy foods most of the time and enjoy an indulgent treat on occasion?
But these Macadamia Coconut Bites are the real deal. They’re indulgent while containing only wholesome ingredients and no refined/added sugars. So, when you crave something indulgent, but also want to feel good about what you’re eating, these bites are just what you’re looking for…whether as a snack or dessert.
Keep them displayed prominently over other treats in the house so they are what you and your loved ones grab for first.
Macadamia Coconut Bites
(Gluten-free; Plant-Based/Vegan; No Added/Refined Sugars)
Ingredients:
2 cups Medjool dates, pitted and chopped
1/4 cup macadamia coconut butter (I used Artisana Organics) or plain macadamia nut butter
1/4 cup unsweetened shredded coconut
1/4 tsp. sea salt
1 tsp. vanilla extract
1/4 cup flax meal
Instructions:
Place Medjool dates, macadamia coconut butter, shredded coconut, salt and vanilla in a food processor and mix on the "dough" setting for about one minute. Form the dough into balls and roll each one in the flax meal to create an outer dusting. Refrigerate.
